Blueberry Crisp for Two
Like most people, I’ve been baking a lot more lately. The one downside to all the baking is no one to share with because of social distancing so I end up with more baked goods than two of us can eat. This blueberry crisp solves that problem- it makes just the right amount for two people. It’s easy to make and uses ingredients you probably already have at home- frozen fruit, flour, sugar, and oats. It’s also a forgiving recipe- if you don’t have blueberries you can use whatever frozen fruit you have and it will still taste delicious.
Blueberry Crisp for Two
Prep Time: 5 minutes Cook Time: 20-25 minutes
Yield: 2 servings
Ingredients:
Filling:
1 1/3 cup blueberries, frozen or fresh
zest and juice of 1/2 lemon
1 tablespoon brown or granulated sugar
2 teaspoons flour
Topping:
2 tablespoons butter
1 tablespoon flour
1 tablespoon brown sugar
1/8 teaspoon cinnamon
1/4 cup oats
Instructions:
Preheat oven to 375 degrees F
In a small bowl, mix together the blueberries, zest and lemon juice, sugar, and flour. Spoon filling into two ramekins.
In a different small bow, use a fork to combine the butter, flour, brown sugar, cinnamon, and oats. Spoon the topping on top of the blueberry filling in the ramekins.
Bake for 20-25 minutes, until filling is bubbling and top is golden brown. Enjoy warm.
Notes:
Frozen blueberries work just as well as fresh here. If you can’t find blueberries, you can substitute with other frozen fruit, such as raspberries, strawberries, or cherries
