Banana Baked Oatmeal

If you’re looking for an easy, make ahead breakfast for the week then this oatmeal is perfect. I love it with blueberries, but you can use whatever add ins you have on hand.

Banana Baked Oatmeal Recipe

Prep Time: 5 minutes Cook Time: 45 minutes

Yield: 9 servings

Ingredients:

  • 2 well ripened bananas

  • 1 1/2 cup milk of choice: I use almond

  • 2 eggs

  • 1/4 cup maple syrup

  • 2 tablespoons canola oil or melted butter

  • 1 teaspoon vanilla extract

  • 2 cups old fashioned oats

  • 2 tablespoons chia seeds

  • 1 1/2 teaspoons cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • Optional: 1- 1 1/2 cup add ins: blueberries (fresh or frozen), chopped nuts, chocolate chips, dried cranberries

Instructions:

  1. Preheat oven to 350 degrees F. Spray an 8 x 8 inch baking dish with nonstick spray.

  2. In a large bowl, mash the bananas. Add in all of the other ingredients and whisk well.

  3. Pour into greased baking pan. Cook for 40-50 minutes, or until set.

  4. This is best served warm with a little milk drizzled on top. Store leftovers covered in the refrigerator.
