Banana Baked Oatmeal
If you’re looking for an easy, make ahead breakfast for the week then this oatmeal is perfect. I love it with blueberries, but you can use whatever add ins you have on hand.
Banana Baked Oatmeal Recipe
Prep Time: 5 minutes Cook Time: 45 minutes
Yield: 9 servings
Ingredients:
2 well ripened bananas
1 1/2 cup milk of choice: I use almond
2 eggs
1/4 cup maple syrup
2 tablespoons canola oil or melted butter
1 teaspoon vanilla extract
2 cups old fashioned oats
2 tablespoons chia seeds
1 1/2 teaspoons cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking powder
1/4 teaspoon salt
Optional: 1- 1 1/2 cup add ins: blueberries (fresh or frozen), chopped nuts, chocolate chips, dried cranberries
Instructions:
Preheat oven to 350 degrees F. Spray an 8 x 8 inch baking dish with nonstick spray.
In a large bowl, mash the bananas. Add in all of the other ingredients and whisk well.
Pour into greased baking pan. Cook for 40-50 minutes, or until set.
This is best served warm with a little milk drizzled on top. Store leftovers covered in the refrigerator.
These easy to make pancakes are full of fiber from the oats and protein from the protein powder. I like adding some blueberries or chocolate chips while they cook for extra flavor, but they taste great without any add ins. They’re even great leftover and warmed in the microwave.
