Crispy Roasted Chickpeas

Are you ever unsure what to make for dinner, but craving something warm and crunchy? These roasted chickpeas are the perfect solution. All you need is a can of chickpeas, some olive oil, and salt. They are an excellent addition to a salad or buddha bowl, but they also taste great on their own as a snack. You can add different spices depending on the taste you are going for.

Crispy Roasted Chickpeas

Prep Time: 5 minutes Cook Time: 20-25 minutes

Ingredients:

  • 1 can chickpeas

  • 1 tablespoon olive oil

  • salt

Instructions:

  1. Preheat oven to 425 degrees. Line a small baking sheet with parchment paper or use unlined.

  2. Drain the chickpeas and rinse well. Lay the chickpeas on a towel or paper towels and pat dry. They should be pretty dry- that’s what helps them crisp up.

  3. Place chickpeas on the baking sheet. Drizzle on the olive oil. Sprinkle on some salt to your preference and mix it all together until all chickpeas are coated in oil.

  4. Bake for 20-25 minutes, until starting to brown and getting crispy.

  5. They are best enjoyed warm. If you don’t eat them all right away, store at room temperature.

Notes:

  • My favorite flavor is just simple sea salt, but you can add any other spices you prefer. Paprika or chili powder are great options.
