Zesty Chicken Burgers

While I usually make homemade turkey burgers, sometimes I like to switch it up and try some chicken burgers. The chicken can be bland on it’s own, so it needs lots of spices for flavor. These burgers are full of spices, but what really takes it up a notch is the addition of the lime. The little bit of acid from the lime adds another dimension of flavor that really makes these burgers stand out.

Zesty Chicken Burgers

Prep Time: 5 minutes Cook Time: 15 minutes

Yield: 4 burgers

Ingredients:

  • 1 pound ground chicken*

  • 1/3 cup cheddar cheese*, shredded

  • 1/4 bell pepper, diced

  • 1 jalapeno, seeds and stem removed, diced

  • 2 green onions, white and light green parts, diced

  • 1 tablespoon fresh basil*, chopped

  • 1 teaspoon garlic powder

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • 1 lime, zest and juice

  • salt and pepper

  • 4 hamburger buns

  • Toppings: jalapenos, avocado, cheese, mayo, ketchup, lettuce, etc.

Instructions:

  1. Preheat your grill or grill pan to medium heat.

  2. Place the chicken, cheese, pepper, jalapeno, onion, basil, and spices in a medium bowl. Add the lime zest. Season with salt and pepper. Use your hands to mix everything together evenly. Form into 4 even sized patties.

  3. Grill or cook in the pan until cooked through, about 5-7 minutes per side. Temperature of burger should reach 165 degrees F. If cooking in a pan, squeeze the lime juice over the burgers when you flip them. If grilling, squeeze the lime after cooking.

  4. If using buns, I like to lightly toast the buns for a couple minutes using the pan the burgers cooked in. Turn the heat to low if you do this.

Notes:

  • Chicken: a good substitute for the chicken would be ground turkey

  • Cheddar cheese: if you don’t have cheddar cheese, just use whatever cheese you have on hand. Pepper jack would add great flavor.

  • Basil: you can leave this out or substitute with another fresh herb, such as cilantro or parsley

  • Low FODMAP: Omit the garlic powder and green onions. Serve without the bun or with a low FODMAP, gluten-free bun.

  • Gluten Free: Enjoy the burger without a bun or on a gluten free bun
