The Best Grilled Chicken

I love grilled chicken, but sometimes it can be boring and dry. This chicken is neither of those things. The trick to making it really juicy is marinating it with yogurt. Yes, it sounds weird to marinate with yogurt, but the yogurt helps to tenderize the chicken and keep it really moist. The spices in the marinade add tons of flavor, but still allow the chicken to taste great with different styles of cuisine. To make this a meal, I like serving the chicken with some grilled vegetables and sweet potatoes or else on top of a big salad.

The Best Grilled Chicken

Prep Time: 2 hours Cook Time: 15 minutes

Yield: 4 servings

Ingredients:

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs

  • 1/2 cup plain yogurt, greek or regular

  • 2 tablespoons olive oil

  • 1 lemon, zest and juice

  • 1 teaspoon garlic powder*

  • 1 tablespoon paprika

  • 1 1/2 teaspoons cumin

  • optional: 1/8 - 1/4 teaspoon red pepper flakes*

  • 1 tablespoon fresh parsley, chopped

  • salt & pepper

Instructions:

  1. Place the yogurt, olive oil, lemon juice, lemon zest, spices, and parsley in a large ziploc bag or container. Season with salt and pepper. If using a bag, squeeze the ingredients together to combine. If using a container, whisk them together. Place the chicken in with the marinade, and be sure all sides are coated. Marinate in the refrigerator for at least.2 hours or overnight.

  2. Preheat grill to medium-high heat for 10 minutes. Add the chicken to the grill and cook for about 5-6 minutes on each side, or until the internal temperature reaches 165 degrees. If using chicken thighs, cook time will be shorter. Remove from grill and enjoy while warm

Notes:

  • Low FODMAP: omit the garlic powder

  • Red Pepper Flakes: omit if you do not like spicy food
