Parmesan Roasted Cauliflower
This seems like a simple recipe to share, and it definitely is, but it’s so worth sharing because of how good it is. Roasting the cauliflower with different spices brings out the best flavor in it. Then the parmesan cheese and panko crisp up in the oven and take the cauliflower to the next level. After making this, you’ll wonder why cauliflower is ever served without parmesan cheese.
Parmesan Roasted Cauliflower
Prep Time: 5 minutes Cook Time: 30 minutes
Yield: 4 servings
Ingredients:
1 head cauliflower, cut into small florets
1 teaspoon garlic powder
2 teaspoons paprika
1/4 - 1/2 teaspoon cayenne pepper, depending on your preference for spice
salt and pepper
6 tablespoons olive oil
2/3 cup shredded parmesan cheese
2/3 cup panko or regular breadcrumbs
Instructions:
Preheat oven to 400 degrees. If desired, line a baking sheet with parchment paper.
In a medium bowl, combine the cauliflower with the spices and olive oil. Season with salt and pepper. Stir to evenly coat the cauliflower with spices and oil. Add the parmesan cheese and breadcrumbs and stir together to evenly distribute.
Place the cauliflower onto the baking sheet and sprinkle any crumbs/parmesan from the bottom of the bowl on top of the cauliflower. Make sure the cauliflower is spread out on the baking sheet- you want it to roast and not steam. If needed, you can use two baking sheets.
Bake for 25- 30 minutes, stirring halfway through to make sure all sides cook. Enjoy hot!
