Easy Breakfast Cookies
These cookies are like a warm bowl of oatmeal, but in cookie form. They’re easily customizable based on the ingredients you have on hand. They’re perfect for breakfast, but I also love them as a post workout snack given the combination of carbohydrates plus protein.
Easy Breakfast Cookies
Prep Time: 10 minutes Bake Time: 15 minutes
Yield: 12 cookies
Ingredients:
2 ripe bananas
1 cup peanut butter*
1 egg
1/4 maple syrup*
1 teaspoon vanilla extract
2 cups quick oats
1/4 cup protein powder: if you don’t have any, use an extra 1/4 cup quick oats instead
1/2 teaspoon salt
1/2 cup dried fruit: cherries, raisins, cranberries, or chopped apricots
2/3 cup chopped nuts: cashews, almonds, pecans, or any others
Instructions
Preheat the over to 325 degrees F
In a medium bowl, mash the bananas. Add the peanut butter, egg, maple syrup, and vanilla extract. Whisk well until all combined.
Add the oats, protein powder, salt, dried fruit, and chopped nuts to the bowl. Using a wooden spoon or spatula, mix until well combined and evenly distributed.
Using a large cookies scoop, scoop cookies onto parchment or silpat lined baking sheet. Lightly press down the tops of the cookies. Bake until the edges are just starting to brown, about 15 minutes. Allow to cool on baking sheet for 5-10 minutes and then transfer to wire rack to cool completely.
Cookies stay well at room temperature for a few days or in the refrigerator for up to a week. They also freeze well. Just thaw for a couple hours or overnight.

Peanut butter: you can use any kind of nut butter you have, such as cashew or almond.
Maple syrup: you can always substitute honey or molasses for the maple syrup
Protein powder: I used chocolate peanut butter flavored protein powder, but you can use any flavor you prefer. You can also use unflavored protein powder.
